Kamut® - an age-old wheat from the ‚Fertile Crescent‘

Kamut® khorasan wheat is an ancient wheat variety originally from Iran and was also cultivated in Ancient Egypt. Since its re-discovery in the 1950s, it is solely grown organically, mainly in North America. The grains of this ancient wheat are twice as big as regular durum wheat grains. They have a mild, slightly nuttily aroma. Kamut® is 20-40% higher in protein than wheat and contains minerals and trace elements, especially selenium that works as an antioxidant and binds heavy metals. Kamut® is unmodified in its original composition and does not contain any additions of modern wheat varieties. Kamut® is glutenous but due to its nativeness more digestible. Therefore it serves as a potential alternative to grain allergy sufferers.

Spelt - a long forgotten native grain

Spelt was cultivated mainly in South Germany during the Middle Ages. Also called dinkel wheat, it was gradually eliminated by the more fruitful wheat, but in the past few decades it has been experiencing a revival in the health food scene. Spelt provides plenty of vitamin E that has an antioxidative effect and protects the cells from pre-mature aging. It is also a good source of the mineral phosphorus that is, along with calcium, important for strong bones and teeth. Teff - the smallest grain in the world

Teff is the most important crop of Ethiopia. This milleniums-old grain is a variety of millet with very small-sized grains. Although a true cereal, it is absolutely free from gluten. Teff is especially characterized by a low-glycemic index. This is very interesting for diabetics and athletes because the glucose from the carbohydrates is supplied only slowly, over a period of several hours so that extremely variable blood glucose levels do not appear. In addition, the high iron content increases the amount of red blood cells, leading to improved endurance and athletic performances. Teff is very low in fat and contains plenty of dietary fibre and protein. The content of vitamin E exceeds wheat by 55%.

Coconut flour - rich in dietary fiber

Coconut flour originates when fresh coconuts are being de-fatted, gently dried and finally ground into a fine powder. The remaining fat amount of 12% mainly consists of middle-chained fatty acids which the body uses for energy production and not stores them as body fat. With 20%, the protein content is also fairly high. Coconut flour has a delicious, slightly sweet taste that somewhat reminds of bran. It contains 40% dietary fibre and less carbohydrates and therefore only has a low impact on the blood glucose level. Coconut flour is not only perfect for diabetics but also for allergy sufferers because it is free from gluten and lactose.

Coconut rasps - especially aromatic and with healthy fats

Coconut rasps are made from fresh coconuts which are being processed not later than three days after harvesting. They are low in carbohydrates and provide plenty of fat, mainly as middle-chained triglycerides. This special form of saturated fatty acids appear only in coconut oil and palm oil. They keep sated for a longer time and are being transported from the intestine to the liver, where they are converted into energy, not into body fat.
