British Retail Consortium (BRC)
On the basis of the BRC Standard, international retailers through the Global Good Safety Initiative (GFSI) established a common audit standards, the International Food Standard (IFS). The IFS aims to increase transparency throughout the complete supply chain in food production.
Food products need to be safe, healthy and appealing for the consumer. The principles of the Good Manufacture Practice (GMP) are applied by safeguarding the hygiene of machinery and technical equipment, microbiological monitoring, sterilisation of casks and containers, personal hygiene as well as pest prevention. The overall situation is monitored through hygiene inspections. Constant updates to hygiene and GMP knowledge and standards are important, too. Furthermore, staff training concerning hygiene principles is mandatory.
The idea behind the Hazard Analysis Critical Control Point (HACCP) system is the systematic analysis of the supply chain from the raw material through all steps of processing and manufacture down to the finished product ready for shipping.
